The Philosophy

Our culinary philosophy embraces the essence of Mediterranean European cuisine, celebrating the richness of fresh ingredients, bold spices, and time-honored traditions. Each dish is meticulously crafted, transporting your taste buds to the sun-drenched shores of Italy, Spain, Greece and beyond. From succulent grilled meats to aromatic herb-infused seafood, every bite tells a story of passion and authenticity. Our commitment to quality extends beyond the kitchen, as we source locally and sustainably, bringing you an experience that is not only delicious but also mindful of the environment.

The Family

The Vermilion House’s journey into the F&B scene in Singapore did not begin in the fall of 2022, but instead, started three decades ago with our parent’s business, which happened to be the oldest Italian wine importer in Singapore. Our father Mr. Gary Tan, an Italian wine ambassador, taught us about Italian wines from an early age, which eventually helped refined our vision of building a restaurant that celebrates the wine-and-dine culture of Mediterranean Europe.

The Legacy

Back in the summer of 2022, when we were conceptualising The Vermilion House and what we would like it to represent, the idea of the Phoenix seemed fitting as it symbolises renewal and rebirth, similar to how us brothers are continuing the family’s legacy in the wine business, albeit in a slightly different shape and form. The word “Vermilion” references the Vermilion Bird in eastern mythologies, and the word “House” reminds us of why we started this restaurant - For family.
